Well, isn’t it obvious? Soaking the beansprouts give the best result! It’s best to change the water daily, but I don’t remember it sometimes and change it after 2 days and they still turn out just fine. I didn’t start with an ice water. I just use regular tap water and put it in the fridge. The fridge will chill the water. It works!



You can, but I don’t recommend it because I hate soggy bean sprouts. The texture deteriorates once you freeze them. They do last indefinitely when you freeze them, but I don’t want to use soggy bean sprouts in my salad or stir-fry. I highly recommend buying bean sprouts only when you do plan to use them in your cooking that week.


When you remove tails from the bean sprouts, they look much better. My kids don’t like to eat bean sprouts with tails. I honestly don’t either. It doesn’t alter the taste a lot, but the stringy tails can be annoying to me! So, I would personally recommend to remove them but I know it can be a chorus to do so! Sometimes I got lazy and just leave them too 🙂 It’s really up to you if you don’t mind those tails. My mom, though, swears, that the sprouts keep longer when you remove the tails.

    To use, remove the bean sprouts from the freezer and allow to thaw in the refrigerator. Additionally, if using in hot recipes such as soups, the bean sprouts can be added to the recipe directly from frozen.

    Food safety authorities may be recommending that sprouts be cooked thoroughly following eight more cases of E. coli poisoning in France, but the notion of cooking what’s most commonly eaten as a fresh garnish may be perplexing for sprout aficionados.

    Aside from avoiding sprouts altogether, the US Department of Agriculture has always maintained that the best way to reduce the risk of illness is to cook them thoroughly.

    Though they’ve been suffering from a bad rap in recent weeks – E. coli poisoning from sprouts is to blame for the deaths of 46 people in Germany – they’re high in nutritional value.

    Bean sprouts are a good source of protein, Vitamin C, and B vitamins. Mung beans, lentils and soybeans are also high in folate, while radish sprouts also have four times more Vitamin A and 29 times more Vitamin C than milk.

    Though it may be uncommon to eat sprouts cooked, in Korean cuisine cooked soybean sprouts, known as kongnamul, are a popular side dish accompaniment.

    These spicy sprouts are cooked thoroughly before being seasoned with minced garlic, chopped green onions, soy sauce, sesame oil and hot pepper flakes. To make a non-spicy version, leave out the hot pepper.
